Answer: | While saffron is usually considered to be yellow, the flowers of the plant can be several colors, including purple. The idea that it is yellow comes from the fact that it is cultivated for its yellow stigmas, which are what is used in medicine and other areas. However, if you buy saffron from an herbal shop, you may find that it is purple. I recall this quite clearly because once when I needed saffron, I spent something like $8.00 to get something that didn't even measure on a scientific weight scale... it was so tiny, and expensive that it left a lasting impression on me. And it was quite burgundy/purple. Almost wine-red. It's the processed product of saffron's stigmas that are yellow. Sean. |
